I have always enjoyed Ginataang Baboy (or pork ginataan). It is better when it is creamy and spicy. The sauce should also be thicky, rather than soupy. Because we want the sauce tastes better as it sits and develops more richness of flavor.

This recipe does not have to be as time intensive. It is easy to prepare and delicous. Just follow the simple steps. The ingredients are easy to find as it is always available in all markets.

This recipe makes use of coconut cream and milk. In addition, I added around 12 pieces of Thai chili peppers to make the dish spicy. I like to eat spicy dishes with coconut milk. Bicol express is a similar dish. However, it uses alamang, rather than regular fish sauce, just like what I have for this recipe.

Adding some bunch of spinach, or malunggay leaves or hot pepper leaves as alternative, to add richness and flavorful.

Ginataang Baboy Recipe

Ingredients

  • 1 ½ lb. Pork belly, cut into cubes
  • 1 bunch fresh spinach
  • 2 cups coconut milk (gata)
  • 2 cups coconut cream (kakang gata)
  • 10 to 12 pieces Thai chili pepper
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, crushed and chopped
  • 2 thumbs ginger, sliced into thin strips
  • 3 tablespoons cooking oil
  • ¼ teaspoon ground black pepper
  • 3 tablespoons fish sauce (patis)

Instructions

  1. Heat oil in a cooking pot.
  2. Saute, onion, garlic, and ginger.
  3. Once the onion becomes translucent and soft, add the pork saute it until light brown.
  4. Pour coconut milk and coconut cream. Let boil.
  5. Add chili pepper (Thai chili). Cover the cooking pot. Cook until the pork becomes tender.
  6. Add spinach. Cover and cook for 2 minutes.
  7. Season with ground black pepper and fish sauce.
  8. Transfer to a serving plate. Serve.
  9. Share and enjoy!
