Laing – An authentic dish from the Bicol region, The Philippines. Originally popularized from the Bicol Region is the dish called “Laing” (La – Ing). It consists of the taro leaves and coconut milk. Visually, unappealing but once you tasted it, you will ask for more.

Sinangag or fried rice – is a Philippine variant of fried rice made with garlic. It is cooked by adding stir-fried garlic to rice and then seasoning the mixture with salt and pepper. Vegetables, meats, and other ingredients may be added but it is generally left bare, because other ingredients may interfere with the flavour of the meat dish eaten with the fried rice. Sinangag is mostly paired with "drier" meat dishes, and very rarely with soupier ones. It is a common, everyday breakfast dish, as the rice used in sinangág is normally left over from the previous evening and thus has a more preferable, firm texture. It is also to avoid wasting rice. Sinangág is a constant component of the breakfast staple tapsilog and its derivatives.

Laing Fried Rice is a rich and spicy dish with taro leaves and coconut milk and/or cream as its main ingredients. Depending on the recipe, pork and shrimp with lots of spicy red chili can be added.

You can immediately tell that I am a fan of fried rice (like shrimp fried rice) and laing. In fact, I have tried many different recipes. The simplest recipe that I tried turned out to be my favorite. It was simple, rich, delicious, and had a soft consistency. It was plainly delish!

Note that I added toasted anchovies in this recipe. I like the taste of anchovies and I like it best when crispy. I simply toasted it in an electric oven toaster. You can also cook it in a pan. Simply add a teaspoon of oil in a small pan and then heat it. Add the anchovies and cook it for a minute while constantly turning it over. It will be best to use a spatula when doing this.

This is a quick fried rice recipe that makes use of laing. These are taro leaves that were cooked in coconut milk.
Ingredients
  • 5 cups leftover white rice
  • 1 cup laing, cooked
  • 6 cloves garlic, crushed
  • 4 tablespoons cooking oil
  • ½ cup toasted anchovies (tustadong dilis)
  • ¼ teaspoon salt
  • 3 pieces red chili (optional)
Instructions
  1. Combine salt and rice in a bowl. Gently mix until well blended.
  2. Heat the oil in a wide pan.
  3. Add the garlic once the oil gets hot. Cook until light brown.
  4. Put the laing in the pan. Stir and cook for 2 minutes.
  5. Add the rice. Continue to cook for 5 to 8 minutes. Stir fry the rice until it blends well with the rest of the ingredients.
  6. Add the toasted anchovies. Stir and cook for 1 minute.
  7. Transfer to a serving plate. Top with red chili.
  8. Serve. Share and enjoy!
